- 4 boneless, skinless chicken breasts
- 4 large potatoes, cubed
- 4 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/2 cup unsalted butter, melted
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken breasts at the bottom of the crockpot and season with salt, pepper, and Italian seasoning.
- Add cubed potatoes around and on top of the chicken.
- In a small bowl, mix melted butter, garlic, Parmesan cheese, salt, and pepper, then pour over chicken and potatoes.
- Cover and cook on low for 6-8 hours or until chicken is tender and potatoes are cooked through.
- Shred the chicken slightly, garnish with fresh parsley, and serve hot.
Notes
- For extra flavor, sprinkle additional Parmesan and herbs before serving.
- You can substitute chicken with boneless thighs for juicier results.
