- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- 1 teaspoon smoked paprika

Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat. Cut chicken breasts into uniform strips.
- Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko, Parmesan (if using), garlic powder, onion powder, smoked paprika, salt, and pepper.
- Dredge each chicken strip in flour, dip into the beaten eggs, then coat thoroughly with the breadcrumb mixture. Press breadcrumbs gently onto the chicken.
- Arrange the breaded chicken strips on the prepared baking sheet. Lightly spray the tops with cooking spray or olive oil spray.
- Bake for 20-25 minutes, flipping halfway through, until crispy and cooked through.

- For extra crispiness, spray the tenders with a little more oil before baking.
