- 1 lb ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add diced onions and garlic, sauté until fragrant. Add ground turkey, cook until browned, season with paprika, thyme, salt, and pepper.
- In a baking dish, layer sweet potato cubes, then spread cooked turkey mixture evenly over the top.
- Sprinkle shredded cheese over the casserole.
- Bake in the preheated oven for 25-30 minutes until sweet potatoes are tender and cheese is melted and bubbly.
Notes
- You can add chopped spinach or bell peppers for extra vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
