Instructions
- Preheat oven to 400°F (200°C). Drizzle sweet potatoes with olive oil, season with salt and pepper, then roast for 25 minutes until tender.
- Meanwhile, in a skillet, cook ground turkey with diced onion and garlic until browned. Add thyme, salt, and pepper.
- Combine cooked turkey mixture with roasted sweet potatoes in a baking dish. Top with shredded cheese.
- Bake for an additional 15 minutes until cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
