- 4 large sweet potatoes
- 1 cup fresh cranberries
- 2 apples, sliced
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons coconut oil
- Optional: chopped pecans for topping
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake for 45-55 minutes until tender.
- Cut each sweet potato in half and carefully scoop out most of the flesh into a mixing bowl, leaving a small border intact.
- In the bowl, mash the sweet potato flesh with coconut oil, cinnamon, nutmeg, and maple syrup until smooth.
- Mix in cranberries and sliced apples. Spoon the mixture back into the sweet potato skins.
- Return the filled sweet potatoes to the oven and bake for an additional 15 minutes until heated through and slightly caramelized.
- Garnish with chopped pecans if desired. Serve warm and enjoy.
