Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 zucchinis, sliced
  • 1 cup cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, oregano, and thyme.
  3. Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat.
  4. Cook the chicken until browned on both sides, about 5 minutes per side. Remove and set aside.
  5. In the same skillet, add remaining olive oil, garlic, sliced zucchini, and cherry tomatoes. Sauté for 3-4 minutes.
  6. Place the chicken back into the skillet on top of the vegetables.
  7. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through.
  8. Garnish with fresh parsley before serving.
