- 4 boneless, skinless chicken breasts
- 3 zucchinis, sliced
- 1 cup cherry tomatoes
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, oregano, and thyme.
- Heat 1 tablespoon of olive oil in a large ovenproof skillet over medium-high heat.
- Cook the chicken until browned on both sides, about 5 minutes per side. Remove and set aside.
- In the same skillet, add remaining olive oil, garlic, sliced zucchini, and cherry tomatoes. Sauté for 3-4 minutes.
- Place the chicken back into the skillet on top of the vegetables.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add olives or feta for extra flavor.
- Serve with crusty bread or a side salad for a complete meal.
