- 1 lb beef stew meat, sliced into thin strips
- 8 oz fresh noodles or pasta
- 4 cups beef broth
- 2 tablespoons soy sauce
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Fresh parsley and green onions for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add sliced beef and cook until browned, about 5 minutes.
- Add onion, garlic, carrots, and celery. Cook for another 5 minutes until vegetables are tender.
- Pour in beef broth and soy sauce. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Meanwhile, cook noodles separately according to package instructions. Drain and set aside.
- Add cooked noodles to the soup. Stir and heat through for 2-3 minutes.
- Season with salt and pepper as needed. Garnish with chopped parsley and sliced green onions before serving.

- You can substitute beef with chicken or vegetarian protein for variety.
- Use homemade broth for deeper flavor.
