Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 can kidney beans, drained
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add beef and cook until browned. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant.
  3. Add browned beef back to the pot along with carrots, potatoes, tomatoes, broth, paprika, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours, until beef is tender and flavors meld.
