- 2 lbs beef stew meat, cubed
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 potatoes, diced
- 1 can kidney beans, drained
- 1 can diced tomatoes
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat oil in a large pot over medium heat. Add beef and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add browned beef back to the pot along with carrots, potatoes, tomatoes, broth, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours, until beef is tender and flavors meld.
Notes
- For extra flavor, add a splash of Worcestershire sauce or hot sauce before serving.
- You can substitute beef with chicken or vegetarian protein options.
