A hearty, cheesy crockpot lasagna soup that captures all the flavors of traditional lasagna in a delicious soup form, slow-cooked to perfection.

Ingredients

  • 1 pound ground beef or sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8 lasagna noodles, broken into pieces
  • 2 tbsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a skillet, brown the ground beef or sausage until cooked through. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and cook until translucent.
  3. Transfer the cooked meat mixture to the crockpot, then add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-8 hours.
  5. During the last 30 minutes of cooking, add broken lasagna noodles and ricotta cheese. Stir to combine.
  6. Once noodles are tender, sprinkle mozzarella and Parmesan cheese on top and cover until melted.
  7. Garnish with fresh basil before serving. Enjoy!
