- 14 oz Italian sausage links, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9 oz) package of refrigerated tortellini
- 2 cups fresh spinach, chopped
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat and cook sausage until browned. Transfer to crockpot.
- Add chopped onion and garlic to the skillet, cook until softened, then transfer to crockpot.
- Pour chicken broth into the crockpot, add sausage, and stir to combine.
- Cover and cook on low for 4 hours.
- Add tortellini during the last 30 minutes of cooking.
- Stir in spinach and Parmesan cheese, cook until wilted.
- Season with salt and pepper, serve hot garnished with extra cheese if desired.
Notes
- You can substitute sausage with turkey or chicken for a leaner option.
- Add red pepper flakes for a spicy kick.
- Prepare ahead and store in the refrigerator for up to 3 days.
