- 1 lb ground beef
- 1 cup Parmesan cheese, grated
- 1 large egg
- 2 cups Italian-seasoned bread crumbs
- 1 package (9 oz) cheese tortellini
- 4 cups beef or vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground beef, Parmesan, egg, bread crumbs, garlic powder, oregano, salt, and pepper. Form into small meatballs.
- Heat a large pot over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes.
- Add broth and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Stir in tortellini and cook according to package instructions, about 3-5 minutes.
- Garnish with fresh basil and additional Parmesan before serving.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add spinach or kale for extra greens.
- Serve with crusty bread for a complete meal.
