  • 1 cup Parmesan cheese, grated
  • 1 large egg
  • 2 cups Italian-seasoned bread crumbs
  • 1 package (9 oz) cheese tortellini
  • 4 cups beef or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, Parmesan, egg, bread crumbs, garlic powder, oregano, salt, and pepper. Form into small meatballs.
  2. Heat a large pot over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes.
  3. Add broth and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
