Ingredients

  • 1 pound Italian sausage, sliced
  • 1 package (9 oz) fresh tortellini
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook sausage over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until tender.
  3. Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat, add cooked sausage and tortellini. Simmer until tortellini is tender.
  5. Garnish with fresh parsley and serve hot.
