- 1 pound Italian sausage, sliced
- 1 package (9 oz) fresh tortellini
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until tender.
- Add chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat, add cooked sausage and tortellini. Simmer until tortellini is tender.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute sausage with turkey or chicken for a lighter version.
- Adjust seasoning to taste, adding red pepper flakes if you like spicy soup.
- This soup can be stored in the refrigerator for up to 3 days.
