Instructions
- Heat olive oil in a skillet and brown the chicken chunks until golden, then transfer to the slow cooker.
- Add chopped vegetables and garlic to the slow cooker.
- Pour in chicken broth and season with thyme, rosemary, salt, and pepper.
- Cook on low for 6-8 hours until chicken is tender and vegetables are cooked.
- Garnish with fresh parsley before serving.
