Ingredients

- 1.5 pounds boneless, skinless chicken breasts or thighs
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season the chicken with salt, pepper, thyme, and rosemary.
- In a skillet, heat olive oil over medium heat and brown the chicken for 3-4 minutes per side.
- Place the browned chicken in the slow cooker.
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- Pour in chicken broth and stir to combine.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Once cooked, shred the chicken and stir to combine. Serve hot garnished with fresh herbs.
Notes
- You can add peas or green beans during the last 30 minutes for extra vegetables.
- Use boneless chicken for quicker preparation and easier shredding.
