- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 cup milk or cream
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 2 tablespoons fresh parsley, chopped
- Olive oil for sautéing
Instructions
- Preheat a skillet with olive oil over medium heat.
- In a bowl, combine ground beef, bread crumbs, Parmesan, egg, salt, and pepper. Form into small meatballs.
- Cook meatballs in the skillet until browned and cooked through. Remove and set aside.
- In a large pot, sauté onions, carrots, and celery until tender.
- Add beef broth and bring to a simmer.
- Return meatballs to the pot and cook for an additional 10 minutes.
- Stir in milk or cream, garnish with parsley, and serve hot.

- You can substitute ground turkey or chicken for beef.
