Perfect for family dinners or gatherings, this easy-to-make casserole offers rich flavors with minimal prep and a satisfying baked finish.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 lbs (900 g) potatoes, diced
  • 1 lb (450 g) smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Peel (if desired) and dice the potatoes into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook until browned and slightly crispy, about 5 minutes. Remove and set aside.
  3. In the same skillet, add the diced potatoes and cook until they start to soften, about 8-10 minutes. Season with salt and pepper.
  4. In a large mixing bowl, combine cooked potatoes, smoked sausage, ranch seasoning, sour cream, milk, and butter. Mix gently until evenly coated.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Sprinkle shredded cheddar cheese over the top.
  7. Bake at 375°F (190°C) for 20-25 minutes, until cheese is bubbly and golden. Broil for an additional 2-3 minutes if desired.

Notes

  • For quicker preparation, boil or microwave potatoes before baking.
  • Use gluten-free ranch seasoning for a gluten-free version.
  • Garnish with chopped green onions or additional shredded cheese for extra flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the microwave or oven.
