Ingredients
Scale
- 12 slider buns or mini rolls
- 8 slices of crispy bacon, chopped or halved
- 6 large eggs
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 tablespoons milk or heavy cream
- Salt and pepper to taste
- Optional: sliced tomatoes, spinach, or avocado for added freshness
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined. Set aside.
- Pour the egg mixture into a skillet over medium heat. Cook, stirring gently, until the eggs are fluffy and set. Remove from heat.
- Cook the bacon until crispy using your preferred method—pan-frying, oven baking, or air frying. Chop into small pieces once cooked.
- Slice the slider buns in half. Layer the bottom buns with scrambled eggs, crispy bacon, and shredded cheese. Cover with the top buns.
- Optionally, add sliced tomatoes, spinach, or avocado for extra flavor. Toast the buns lightly if desired.
- Serve immediately for a hot breakfast or store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat before serving.
Notes
- For best results, use high-quality bacon and cheese.
- To make ahead, prepare the eggs and bacon separately and assemble just before serving.
- Feel free to customize with additional toppings like sliced tomatoes, spinach, or avocado.
- To keep buns fresh, wrap leftovers tightly with foil or plastic wrap.
