- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce or tamari for gluten-free
- 1 tablespoon honey or maple syrup
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green onion, chopped (for garnish)
- Sesame seeds (optional, for garnish)
- Cooking oil of your choice (vegetable, canola, or sesame oil)
Instructions
- Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until golden brown and cooked through, about 7-10 minutes. Remove and set aside.
- In the same pan, add minced garlic and cook for 30 seconds until fragrant. Pour in the sweet chili sauce, soy sauce, and honey. Stir and simmer for 2-3 minutes until the sauce slightly thickens.
- Add the sliced red bell pepper and cook for another 3–4 minutes until tender but still vibrant.
- Return the cooked chicken to the skillet, toss to coat in the sauce, and simmer for another 2 minutes to meld flavors. Garnish with chopped green onions and sesame seeds if desired.

- Use chicken thighs for a juicier, more flavorful result.
- Control sweetness and sodium by adjusting honey and soy sauce quantities.
- Serve with steamed rice, noodles, or vegetables for a complete meal.
