  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green onion, chopped (for garnish)
  • Sesame seeds (optional, for garnish)
  • Cooking oil of your choice (vegetable, canola, or sesame oil)

Instructions

  1. Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until golden brown and cooked through, about 7-10 minutes. Remove and set aside.
  2. In the same pan, add minced garlic and cook for 30 seconds until fragrant. Pour in the sweet chili sauce, soy sauce, and honey. Stir and simmer for 2-3 minutes until the sauce slightly thickens.
  3. Add the sliced red bell pepper and cook for another 3–4 minutes until tender but still vibrant.
  4. Return the cooked chicken to the skillet, toss to coat in the sauce, and simmer for another 2 minutes to meld flavors. Garnish with chopped green onions and sesame seeds if desired.
