- 4 boneless, skinless chicken breasts
- 3 medium zucchinis, sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C). Prepare chicken breasts, zucchinis, cherry tomatoes, olives, and herbs.
- Mix oregano, garlic powder, smoked paprika, salt, and pepper in a small bowl. Rub the spice mixture evenly over the chicken breasts.
- Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Remove from heat. Arrange sliced zucchinis around and on top of chicken. Scatter cherry tomatoes, olives, and feta cheese over the dish.
- Place the skillet in the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender. Garnish with chopped basil before serving.

- Pat chicken dry before seasoning for a better sear.
