  • 4 boneless, skinless chicken breasts
  • 3 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, pitted and sliced
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare chicken breasts, zucchinis, cherry tomatoes, olives, and herbs.
  2. Mix oregano, garlic powder, smoked paprika, salt, and pepper in a small bowl. Rub the spice mixture evenly over the chicken breasts.
  3. Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  4. Remove from heat. Arrange sliced zucchinis around and on top of chicken. Scatter cherry tomatoes, olives, and feta cheese over the dish.
  5. Place the skillet in the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender. Garnish with chopped basil before serving.
