Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
- In a bowl, combine chopped apples with 1 teaspoon cinnamon; set aside.
- In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, nutmeg, and salt.
- Add melted butter, egg, and vanilla to the dry ingredients; stir until just combined.
- Fold in the chopped apples.
- Prepare streusel topping by combining flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
- Spoon batter into muffin cups, filling each about 3/4 full.
- Sprinkle streusel evenly over each muffin.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool slightly before removing from tin. Serve warm or at room temperature.
