- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 large carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound gnocchi
- 2 cups cooked shredded chicken
- 2 cups fresh spinach, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery, cook until tender.
- Add minced garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Stir in shredded chicken, heavy cream, basil, thyme, salt, and pepper. Reduce heat to low and simmer for 10 minutes.
- Add chopped spinach and cook until wilted.
- Serve hot, garnished with Parmesan cheese.

- Adjust cream and broth for desired creaminess and thickness.
- You can substitute cooked turkey or beef for chicken.
