- 8 small taco shells
- 2 cups cooked chicken, shredded
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced tomatoes
- 1/4 cup chopped onions
- 1/4 cup salsa
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine shredded chicken, chili powder, cumin, salt, and pepper.
- Place taco shells on a baking sheet and lightly brush with olive oil.
- Fill each shell with the seasoned chicken mixture.
- Sprinkle shredded cheese over the top.
- Bake for 10-12 minutes until shells are crispy and cheese is melted.
- Remove from oven and garnish with chopped cilantro, diced tomatoes, onions, and salsa.
- Serve immediately with extra salsa if desired.

- You can customize toppings with sour cream, avocado, or jalapenos.
- Use leftover cooked chicken for quicker prep.
