- 1 cup (125g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup (75g) chopped fresh apple
- 1 tablespoon ground cinnamon
- 2 tablespoons granulated sugar (for coating)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, and cinnamon. In another bowl, cream together butter and sugar until fluffy. Beat in egg and vanilla.
- Fold in chopped apple and dry ingredients until just combined.
- Mix remaining sugar with cinnamon in a small bowl. Roll spoonfuls of dough into balls and coat in cinnamon sugar.
- Place on prepared baking sheet and flatten slightly. Bake for 10-12 minutes until golden around edges.
- Allow to cool on wire rack before serving.
