- 1 pound sausage slices
- 1 onion, diced

- 2 tablespoons olive oil
Instructions
- Cook rice according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until translucent.
- Add sausage slices and cook until browned.
- Stir in black beans, paprika, cumin, salt, and pepper. Cook for 5-7 minutes until flavors meld.
- Serve the sausage and bean mixture over warm rice, garnished with fresh herbs.

- Feel free to add diced bell peppers or spicy peppers for extra flavor.
- Best enjoyed with a squeeze of lime and a side salad.
