  • 4 large potatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dice potatoes; slice smoked sausage into thin rounds.
  2. In a large bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 20-25 minutes until golden.
  3. While potatoes roast, heat a skillet over medium heat. Add sliced sausage and cook for 4-5 minutes until browned. Set aside.
  4. In a large bowl, combine roasted potatoes, cooked sausage, ranch seasoning, sour cream, and half of the shredded cheddar cheese. Transfer to a baking dish and sprinkle remaining cheese on top.
  5. Bake for 10 minutes until bubbly and cheese melts. Garnish with fresh parsley before serving.
