- 1.5 lbs smoked sausage, sliced
- 4 large potatoes, diced
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1/2 cup sour cream
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Wash and dice potatoes; slice smoked sausage into thin rounds.
- In a large bowl, toss potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 20-25 minutes until golden.
- While potatoes roast, heat a skillet over medium heat. Add sliced sausage and cook for 4-5 minutes until browned. Set aside.
- In a large bowl, combine roasted potatoes, cooked sausage, ranch seasoning, sour cream, and half of the shredded cheddar cheese. Transfer to a baking dish and sprinkle remaining cheese on top.
- Bake for 10 minutes until bubbly and cheese melts. Garnish with fresh parsley before serving.
Notes
- For extra crispy potatoes, broil the dish for an additional 2-3 minutes at the end of baking.
- Use chicken or turkey sausage as a healthier alternative.
