Instructions
- Remove sausage from casings and brown slightly in a skillet before transferring to the slow cooker.
- Add sliced peppers, onions, garlic, diced tomatoes, Italian seasoning, salt, and pepper into the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours until flavors meld and peppers are tender.
- Garnish with fresh parsley before serving.
