- 2 lbs boneless skinless chicken breasts, sliced into strips
- 1 cup orzo pasta
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 tbsp Cajun seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- Fresh parsley, chopped for garnish
- Lemon wedges for serving
Instructions
- Preheat a large skillet over medium-high heat. Toss chicken strips with Cajun seasoning.
- Heat 1 tbsp olive oil in the skillet, then add chicken. Cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, add remaining olive oil, garlic, and sliced bell peppers. Sauté for 3-4 minutes until tender.
- Add orzo pasta to the skillet, stirring to coat with oil and spices. Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer until orzo is tender and liquid is absorbed, about 10 minutes.
- Stir in heavy cream, cooked chicken, and cook for another 2 minutes until heated through.
- Garnish with parsley and serve with lemon wedges.
Notes
- Adjust Cajun seasoning to taste for spiciness.
- You can substitute chicken with shrimp or sausage for variation.
- Serve with a side salad for a complete meal.
