Instructions
- Preheat your waffle iron and grease lightly.
- In a large bowl, combine cornmeal, flour, baking powder, salt, and black pepper.
- Add shredded cheddar and chopped jalapeños to the dry ingredients and mix well.
- In a separate bowl, whisk together buttermilk, eggs, and melted butter.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Pour batter onto the preheated waffle iron and cook until golden brown and crispy.
- Serve warm with additional cheese and jalapeños if desired.
Notes
- For extra spice, add additional jalapeños or a dash of hot sauce.
