- 4 jalapenos, seeded and chopped
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 4 cups chicken or vegetable broth
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- Salt and pepper to taste
- Chopped chives and sliced jalapenos for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until translucent.
- Add chopped jalapenos and cook for 3-4 minutes.
- Pour in broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Stir in cream cheese and shredded cheddar until melted and smooth.
- Remove from heat, then stir in sour cream. Season with salt and pepper.
- Serve hot, garnished with chopped chives and sliced jalapenos.
Notes
- Adjust spice level by adding more or fewer jalapenos.
- Use fresh or pickled jalapenos depending on your heat preference.
