Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken slices and season with chili powder, cumin, paprika, salt, and pepper. Cook until browned and cooked through.
- Add sliced peppers and diced tomatoes. Cook until peppers are tender, about 5 minutes.
- Sprinkle shredded cheese evenly over the skillet. Cover and cook until cheese melts.
- Garnish with chopped cilantro before serving.

- Feel free to add sliced jalapenos for extra spice.
