- 2 lbs chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 cups jasmine rice, cooked
- Sesame seeds and chopped scallions for garnish
Instructions
- Marinate chicken thighs in soy sauce, honey, rice vinegar, brown sugar, garlic, and ginger for 30 minutes.
- Preheat oven to 400°F (200°C). Bake chicken until crispy and caramelized, about 25-30 minutes.
- While chicken is baking, prepare rice according to package instructions.
- Once cooked, drizzle the chicken with any leftover marinade and let rest for 5 minutes.
- Serve the crispy chicken atop rice, garnished with sesame seeds and scallions.
Notes
- For extra flavor, add a splash of lime juice before serving.
- Adjust sweetness or saltiness by modifying honey and soy sauce quantities.
