Instructions
- Prepare the rice and set aside.
- Grill or cook the chicken breasts until fully cooked, then slice into strips.
- Char or roast the corn kernels until slightly browned.
- Mix mayonnaise, lime juice, chili powder, and a pinch of salt to make the sauce.
- Assemble the bowls: layer rice, chicken, corn, and drizzle with the sauce.
- Top with crumbled Cotija, cilantro, green onions, and lime wedges.
- Serve immediately and enjoy.
