- 2 large sweet potatoes
- 1/4 cup feta cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice sweet potatoes into 1/4-inch thick rounds.
- Brush the rounds with olive oil on both sides and arrange on the baking sheet.
- Roast for 20-25 minutes until edges are crispy and centers are tender.
- Remove from oven and transfer to a serving platter.
- Top with crumbled feta cheese and drizzle with honey.
- Garnish with fresh herbs if desired and serve warm.
Notes
- Can be made vegan by substituting feta with plant-based cheese.
- Adjust honey amount for preferred sweetness.
- Best enjoyed fresh but can be stored in an airtight container for up to 1 day.
