- 1 cup powdered sugar

- 1/2 cup raspberry jam
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together butter and powdered sugar until light and fluffy.
- Mix in vanilla extract. Gradually add flour and salt, mixing until well combined.
- Divide dough into two halves. Roll each into a rectangle about 1/4 inch thick.
- Spread raspberry jam evenly over one dough sheet, then place the second sheet on top.
- Gently press to adhere, then roll up from the short end to form a log.
- Slice into 1/2 inch thick cookies and place on the prepared baking sheet.
- Bake for 12-15 minutes or until edges are golden.
