  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika (optional for extra flavor)
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish
  • Optional: red pepper flakes for a spicy kick

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, and smoked paprika if using. Roast on a parchment-lined baking sheet for 25-30 minutes until tender and caramelized.
  2. While roasting, heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausages and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
  3. In the same skillet, lower heat, add minced garlic and cook for 1 minute. Stir in honey and cook for 2 minutes until slightly thickened. Season with salt, pepper, and red pepper flakes if desired.
  4. Add cooked sausages back into the skillet and toss to coat in the sauce. Add roasted sweet potatoes and stir gently to combine. Heat for an additional 2-3 minutes until flavors meld.
