- 4 large sweet potatoes, peeled and diced
- 1 lb (450g) of your favorite sausages (pork, chicken, or turkey)
- 3 tablespoons honey
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika (optional for extra flavor)
- Salt and black pepper to taste
- Fresh parsley or green onions for garnish
- Optional: red pepper flakes for a spicy kick
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, salt, pepper, and smoked paprika if using. Roast on a parchment-lined baking sheet for 25-30 minutes until tender and caramelized.
- While roasting, heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausages and cook until browned and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, lower heat, add minced garlic and cook for 1 minute. Stir in honey and cook for 2 minutes until slightly thickened. Season with salt, pepper, and red pepper flakes if desired.
- Add cooked sausages back into the skillet and toss to coat in the sauce. Add roasted sweet potatoes and stir gently to combine. Heat for an additional 2-3 minutes until flavors meld.

- You can substitute sweet potatoes with regular potatoes if preferred.
- For a spicier version, increase the red pepper flakes or add hot sauce.
