- 4 large sweet potatoes, peeled and cubed
- 1 lb (450g) chicken or pork sausage links (see options)
- 3 tbsp honey
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp soy sauce (optional)
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tbsp olive oil, salt, pepper, and smoked paprika. Roast for 25-30 minutes until golden and tender.
- While roasting, heat a large skillet over medium heat. Add 1 tsp olive oil and cook sausages until browned on all sides, about 8-10 minutes. Slice sausages into bite-sized pieces if preferred.
- Whisk together honey, minced garlic, soy sauce (if using), and a splash of water for the glaze.
- Add cooked sausages to the skillet with honey garlic glaze. Cook for 2-3 minutes until caramelized. Add roasted sweet potatoes and toss to combine.
- Transfer to a serving dish, garnish with fresh parsley or thyme, and serve hot with sides like rice or a green salad.

- You can substitute sausages with chicken, beef, or plant-based options.
- Adjust honey and garlic to suit your taste.
- Add red pepper flakes for some heat if desired.
