Ingredients
Scale
- 1 cup fresh blueberries
- 2 cups Greek yogurt (full-fat or low-fat)
- 2-3 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
- Optional toppings: chopped nuts, granola, or coconut flakes
- Silicone molds or ice cube trays for shaping
Instructions
- Start by blending half of the blueberries in a food processor or blender until smooth. For a chunkier texture, pulse a few times instead of pureeing completely.
- In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Mix until smooth and creamy.
- Using a spoon or piping bag, alternate pouring the yogurt mixture and blueberry puree into the molds. Use a toothpick or skewer to gently swirl the two layers, creating a marbled appearance.
- Place the molds in the freezer for at least 4 hours or until fully frozen. For faster setting, use a rapid chilling device like the Ninja SLUSHi Pro RapidChill Drink Maker.
- Pop the frozen bites out of the molds and store in an airtight container or resealable plastic bag in the freezer for up to 2 months.
Notes
- Thaw frozen blueberries before blending if using frozen berries, and drain excess liquid to avoid watery mixture.
- You can substitute honey with agave syrup or coconut nectar for vegan options.
- Add a splash of lemon juice for extra tang in the blueberry puree.
- Use plant-based yogurts like coconut or almond yogurt to make dairy-free versions.
- Sprinkle with chopped nuts, granola, or coconut flakes for added crunch and flavor.
