- 2 lbs boneless chicken breasts or thighs
- 1 cup coconut milk
- 1/4 cup fresh lime juice
- 2 tablespoons honey or maple syrup
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro and lime slices for garnish
Instructions
- Place chicken breasts in slow cooker.
- In a bowl, whisk together coconut milk, lime juice, honey, garlic, ginger, salt, and pepper.
- Pour the mixture over the chicken.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and cooked through.
- Shred the chicken with two forks and mix into the sauce.
- Garnish with chopped cilantro and lime slices before serving.
Notes
For extra flavor, add chopped pineapple or mango during cooking. Serve over rice or with tropical sides.
