- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth

- 1 cup grated Parmesan cheese
- 1 teaspoon dried thyme

- Fresh basil for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Saute chopped onion and garlic until fragrant and translucent.
- Pour in the broth and bring to a simmer.
- Add heavy cream, Parmesan cheese, thyme, salt, and pepper.
- Cook for 10 minutes, stirring occasionally, until ingredients are well combined and soup is heated through.
- Serve hot, garnished with fresh basil and extra Parmesan if desired.
Notes
- For a thicker soup, simmer longer to reduce the broth before adding cream.
- Use freshly grated Parmesan for the best flavor.
