- 4 large eggs for scramble
- 6 slices of crispy bacon
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated mozzarella cheese
- 2 tbsp butter
- Salt and freshly ground black pepper to taste
- Optional: sliced tomatoes or fresh herbs for garnish
Instructions
- Start by cooking the bacon slices until they’re crispy. Drain on paper towels and set aside.
- In a bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium-low heat, add butter, pour in eggs, and gently stir until soft, fluffy curds. Remove from heat and set aside.
- Spread butter on one side of each bread slice. Place two slices, buttered side down, on a skillet over medium heat. Layer with shredded cheese, scrambled eggs, and crispy bacon. Top with remaining cheese and bread slices, buttered side up.
- Cook the sandwiches until golden brown on both sides and the cheese melts, about 3-4 minutes per side. Press gently with a spatula for even grilling. Remove from heat and let sit for a minute before slicing.
