- 2 lbs beef chuck roast, cubed
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup peas
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Place beef cubes in the crockpot.
- Add vegetables, garlic, tomato paste, thyme, salt, and pepper.
- Pour in beef broth.
- Cook on low for 8 hours or high for 4 hours until meat is tender and flavors meld.
- Add peas in the last 30 minutes before serving.
Notes
Feel free to substitute beef with chicken or vegetables for a vegetarian version. Adjust cooking times accordingly for different proteins.
