Instructions
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add orzo pasta and cook, stirring frequently, until lightly toasted.
- Pour in broth, bring to a boil, then reduce heat and simmer until orzo is tender and liquid is absorbed.
- Stir in cherry tomatoes, spinach, and Parmesan cheese. Cook until the spinach wilts and cheese melts.
- Season with salt and pepper, serve hot garnished with additional herbs if desired.
