Ingredients
Scale
- 2 large apples (preferably Fuji or Honeycrisp)
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup milk (dairy or plant-based)
- 1 tsp vanilla extract
- Cooking spray or a little olive oil
Instructions
- Start by peeling, coring, and chopping the apples into small bite-sized pieces. Set aside.
- In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.
- In another bowl, beat the eggs, then stir in the milk and vanilla extract. Add this mixture to the dry ingredients and stir until just combined. The batter should be thick but scoopable.
- Gently fold the apple pieces into the batter, ensuring they are evenly coated.
- Spray the air fryer basket with cooking spray or lightly brush with oil. Preheat your ninja air fryer to 350°F (180°C).
- Using a spoon or ice cream scoop, form small portions of batter and place them in the air fryer basket, leaving space between each. Lightly spray or brush the tops with oil. Air fry for about 8-10 minutes, flipping halfway through, until golden brown and crispy.
Notes
- Use tart apples like Granny Smith for a balanced sweetness.
- Adjust the spices for a more aromatic treat!
- For extra crunch, lightly sprinkle some cinnamon sugar right after cooking.
- Ensure the apple pieces are small for even cooking.
