Instructions
- Preheat your oven to 350°F (175°C). Line or grease a loaf pan.
- Mash the ripe bananas in a large bowl until smooth.
- Add Greek yogurt, eggs, honey, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Do not overmix.
- Fold in chopped nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
