Ingredients

  • 2 large eggs
  • ½ cup orange juice
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • For Streusel:
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup unsalted butter, cold
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in orange juice, pumpkin puree, and vanilla extract.
  6. Gradually fold in dry ingredients until just combined.
  7. For streusel, combine flour, brown sugar, cinnamon, and cold butter, mixing until crumbly.
  8. Pour batter into prepared loaf pan and sprinkle streusel evenly on top.
  9. Bake for 55-60 minutes until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  11. Mix orange glaze with powdered sugar and drizzle over cooled bread before serving.
