Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, allowing some overhang for easy removal.
- In a large mixing bowl, combine the melted butter and sugar. Beat in eggs one at a time, then add vanilla extract, lemon juice, and lemon zest, mixing well.
- Sift together the flour and salt. Gradually add dry ingredients to the wet mixture, stirring just until combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs.
- Remove from oven and let cool completely. Optional: dust with powdered sugar or drizzle with lemon glaze before serving.
Notes
- For an extra lemon flavor, increase lemon zest or add a lemon glaze.
- Use fresh lemon juice for optimal flavor but bottled can be substituted.
- Allow the bars to cool fully for clean slicing.
