- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove excess fat.
- Add chopped onion and minced garlic; sauté until translucent.
- Pour in chicken broth, bring to a simmer.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, salt, and pepper.
- Add chopped spinach and cook until wilted.
- Serve hot with extra Parmesan and fresh bread.
Notes
For a thicker soup, add a cornstarch slurry. You can substitute kale for spinach for a different leafy green flavor. Adjust seasoning to taste.
