- 2 pounds beef sirloin, cut into bites
- 1 pound baby potatoes, halved or quartered
- 4 cloves garlic, minced
- 1/4 cup unsalted butter, melted
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season beef bites with salt, pepper, paprika, and thyme. Set aside.
- Place potatoes in the slow cooker, drizzle with olive oil, and season with salt and pepper.
- Add seasoned beef on top of potatoes.
- Mix melted butter with minced garlic and pour over beef and potatoes.
- Cook on low for 6-8 hours or high for 3-4 hours until beef is tender and potatoes are crispy.
- Garnish with fresh parsley before serving.

- Serve with a side of steamed vegetables or a fresh salad for a complete meal.
- Adjust garlic to taste for more or less flavor.
